Apple Cinnamon Oatmeal with Prunes

- 4 tablespoons unsalted butter, divided (or coconut oil for dairy-free)
- 1 medium apple (gala or honeycrisp), cored and diced
- 1 cup California prunes, chopped
- 1/2 cup pecans, chopped
- 1/4 cup brown sugar
- 2 cups rolled oats
- 1 cinnamon stick
- 3 cups water
- 1/4 teaspoon kosher salt
- 1/2 cup almond milk or dairy milk
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 2 tablespoons chia seeds
- 1/4 cup maple syrup

- Cook prune topping. Heat 2 tablespoons of the butter in a medium frying pan over medium heat. Add 1 medium apple, 1 cup prunes, and ½ cup pecans and toast, stirring frequently, until apples start to soften, prunes begin to melt and pecans become fragrant, about 3 minutes. Add ¼ cup brown sugar and continue stirring until the sugar dissolves and the mixture becomes sticky, about a minute more. Remove to a serving bowl while it's still warm otherwise it will 1 stick to the pan.

- Toast the 2 cups oats. Heat remaining 2 tablespoons of butter in a medium saucepan over medium heat. Add 2 cups oats and 1 cinnamon stick and toast, until the oats become subtly darker and there's a distinct oatmeal cookie aroma. This will take at least 5 minutes, don't shortcut. Stir frequently so the oats don't burn.

- Cook oatmeal. Add 3 cups water, ¼ teaspoon salt, and bring to a simmer. Cook until 2 cups oats are tender but not mushy and most of the liquid has been absorbed, about 5 minutes. It will continue to thicken as it cools.

- Serve. Remove 1 cinnamon stick then divide between 4 bowls and top with prune mixture, splash of ½ cup milk, a sprinkling of 1 teaspoon cinnamon, 1 teaspoon nutmeg and 2 tablespoons chia seeds, and a drizzle of ¼ cup maple syrup. Dig in!
