Banana Bran Muffins

- ¾ cup low-fat vanilla Greek yogurt
- ¾ cup ripe mashed banana (about 2 small bananas)
- ¼ cup fat-free milk
- ⅓ cup granulated sugar
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 large egg, at room temperature
- 1 ½ cups plain bran cereal
- 1 ½ cups all-purpose flour
- ½ cup wheat germ
- 1 teaspoon baking powder
- 1 teaspoon baking soda

- Preheat the oven to 425°F. Spray a 12-cup muffin pan with non-stick spray or line with paper liners. Set aside.
- In a large bowl combine ¾ cup yogurt, ¾ cup banana, ¼ cup milk, ⅓ cup sugar, 2 tablespoons butter, 1 teaspoon vanilla, and 1 large egg. Stir with a whisk. Add 1 ½ cups cereal; let stand for 5 minutes.

- In a separate bowl combine 1 ½ cups flour, ½ cup wheat germ, 1 teaspoon baking powder, and 1 teaspoon baking soda. Stir with a whisk. Make a well in the center of the flour mixture. Add the cereal mixture to the flour mixture. Stir just until moistened.
- Fill each cup of the prepared pan with ¼ cup batter. An ice cream scoop works best for this.
- Bake for 5 minutes. Reduce the oven temperature to 350°F and bake for an additional 10-15 minutes or until muffins spring back when touched in the center.

- Remove the muffins from the pan immediately; place muffins on a wire rack to cool completely.
