Black pepper chicken stir-fry
Ingredients
For the chicken
- 12 oz chicken, diced
- 1 tsp ginger, julienned
- 1 tsp cornstarch
- 1 tbsp water
- 1 tsp sesame oil
For the sauce
- 1 tsp freshly ground black pepper
- 2 tsp cornstarch
- 3 tbsp oyster sauce
- 1 tsp light soy sauce
- 1 tsp dark soy sauce
- 3 tbsp water
For cooking and serving
- 2 tbsp cooking oil
- 1/2 red bell pepper, diced
- 1 small onion, diced
- 2 oz celery, diced
- 1 tbsp scallions, finely chopped
Steps
- Place the 12 oz chicken, 1 tsp ginger, 1 tsp cornstarch and 1 tbsp water in a bowl. Rub and mix until no liquid can be seen. Add 1 tsp sesame oil. Mix then set aside.
- Mix all the ingredients for the 3 tbsp sauce.
- Heat up 2 tbsp oil in a wok over high heat. Add the 12 oz chicken. Stir fry until the chicken cubes become pale on the surface.

- Add 1 small onion, ½ bell pepper and 2 oz celery. Fry for 2 minutes or so until the 12 oz chicken is fully cooked.

- Pour in the 3 tbsp sauce (stir well beforehand). Fry until it becomes thick and coats the 12 oz chicken and vegetables evenly.

- Sprinkle 1 tbsp scallions over. Dish out and serve immediately with plain rice.
