Celtuce Leaves Salad
Ingredients
Ingredients
- 1 small batch celtuce leaves, cut into bite size pieces (yields about 4 cups)
- toasted sesame seeds (for garnish, optional)
- 2 tablespoons Chinese sesame paste (or unsweetened natural peanut butter, or tahini)
- 2 tablespoons Chinkiang vinegar (or rice vinegar)
- 1 tablespoon light soy sauce (or soy sauce)
- 2 teaspoons maple syrup (or sugar)
- 2 teaspoons homemade chili oil (optional)
- 1 clove garlic, grated
Steps
- Tear the 1 small batch celtuce leaves from the stem and rinse thoroughly under cold running water to remove dirt. Drain well and allow to dry completely. If still wet when preparing the salad, pat dry with paper towels. Cut the leaves into bite-sized pieces and arrange on a serving plate.
- In a small bowl, combine 2 tablespoons sesame paste, 2 tablespoons Chinkiang vinegar, 1 tablespoon soy sauce, 2 teaspoons maple syrup, 2 teaspoons chili oil and 1 clove grated garlic. Stir until the mixture is smooth and well combined. Pour half of the sauce over the 1 small batch celtuce leaves.
- Transfer the salad to serving plates and drizzle with the remaining sauce. Add sesame seeds for garnish if desired.
