  1. Cut chicken into thin slices. Marinate the chicken with 1 tbsp soy sauce, 1 tbsp cornstarch, 1 tsp brown sugar, and 2 tsp cooking oil. Mix it well and set it aside.
  2. In a bowl combine the sauce ingredients: 1 tbsp regular soy sauce, 2 tbsp oyster sauce, 6 tbsp water, ½ tsp white pepper, and 1 tsp cornstarch. Whisk until cornstarch is dissolved. Set it aside.
  3. Blanch the 1 medium broccoli in hot boiling 6 tbsp water for 1-2 minutes, then drain and set it aside.

  4. Heat the large wok or pan over medium-high heat. Drizzle 2-3 tbsp oil, add onions, and saute for a few seconds. Follow with the 2 tsp garlic and 2 tsp ginger. Saute until fragrant.
  5. Next, add the marinated chicken pieces. Flatten the chicken slices at the bottom of the pan and let it sear for 2-3 minutes. Once the chicken slices are slightly 1 tsp brown, flip and continue stir fry for another 1-2 minutes or until the chicken is cooked through. Remove everything from pan and set it aside.

  6. In the remaining pan, pour the prepared 1 tbsp sauce in. Stir it well until the sauce is thick and glossy.
  7. Now place the cooked chicken slices and blanched 1 medium broccoli in the pan. Add 1 chilli slices.
  8. Combine everything well and make sure the 1 tbsp sauce coats each chicken and 1 medium broccoli piece. Finish with 1 tsp toasted sesame oil.
  9. Serve with plain rice or noodles.
