Steps

  1. Finely chop the 3-4 spring onions.
  2. In a large mixing bowl, add 7 oz chicken mince, chopped 3-4 spring onions, ½ tsp grated ginger, 1 tsp grated garlic, and seasoning ingredients.
  3. Stir well to combine all ingredients until the fillings become sticky paste.
  4. To wrap the wontons, place 20-25 sheets wonton wrapper in your palm, add 1 teaspoon fillings in the middle of the wrapper. Wet the edges of the wonton paper with water. Fold the wonton into triangle shape, press the edges to seal it. Pull the corners of triangle and wet one side and overlap the corners and press hard to seal it.
  5. Pre-heat 1 tsp oil to about 350°F, deep fry the wontons until crispy golden brown.

  6. Drain 1 tsp oil and place into paper towel or cooling rack first.
  7. To make the chilli dipping sauce, mix 1 tbsp rice vinegar, 1 tbsp light soy sauce, 1 tbsp chilli oil and 1-2 tsp sugar in a bowl.
  8. Transfer the wontons to serving plate. Serve with 1 tbsp chilli dipping sauce or your choice of dipping sauce.
