  1. Slice the 1 ½ lb bok choy in half lengthwise. Rinse thoroughly between the leaves with cold running ½ cup water to remove dirt until the water runs clear.
  2. In a small bowl, whisk together all the 6 garlic 2 tbsp sauce ingredients until combined. Set aside.
  3. Fill a large pan or wok with enough ½ cup water to submerge the 1 ½ lb bok choy and bring to a boil over high heat. Add 1 tsp neutral oil. Blanch the bok choy for 30-45 seconds, or until the leaves are vibrant green and the stalks are tender-crisp.

  4. Immediately strain the 1 ½ lb bok choy and drain very well. Transfer to a large serving plate.
  5. Heat a dry pan over medium heat. Whisk the 2 tbsp sauce again, then pour it into the pan. Simmer, stirring, until glossy and thick enough to coat the back of a spoon, about 30-45 seconds.
