  1. Rinse and cube 1 potato. Add the cubed potato to a mixing bowl along with a glug olive oil, freshly cracked black pepper, a generous pinch of salt (up to ½ teaspoon), and 1-2 teaspoons chile powder (optional). Mix well and form a single layer of the potatoes on a baking sheet with parchment paper. Bake in the oven at 400F for 30-40 minutes.

  2. Rinse 5 jalapenos and de-stem them. Be sure to wash your hands after handling hot chiles.
  3. Saute a roughly chopped ~½ onion and 1 garlic clove in a glug oil over medium heat. Once the onion is browning, add 1 teaspoon Mexican oregano, freshly cracked black pepper, ¼ teaspoon cumin (optional), and ¼ teaspoon salt. Briefly cook until fragrant, then add the de-stemmed 5 jalapenos, ¼ cup white vinegar, and ¼ cup water. Bring to a simmer and add everything to a blender along with juice of 1 lime juice and 6-8 cilantro sprigs. Blend well and taste.

  4. Scramble 5-6 whisked eggs in a knob butter over mediumish heat along with a generous pinch of salt. Optionally saute some finely chopped ~½ onion and jalapeno before adding the whisked eggs.

  5. Gather the other fixings: ½ cup refried beans from the fridge, 1 cup shredded cheese, and diced cooked ½ cup ham.
  6. Warm up each tortilla in a dry skillet over medium heat to make them easier to roll. Assemble each burrito by layering ½ cup refried beans, 5-6 eggs, 1 potatoes, 1 cup cheese and ½ cup ham on the tortilla. Optionally add some Jalapeno Hot Sauce to the insides. Roll tight and crisp up your burrito over medium heat in a dry skillet. This final step will melt the cheese and bring the other fixings up to temperature.

  7. Serve up your breakfast burritos next to the Jalapeno Sauce so you have the option of adding a few drops to each bite.
