  1. Finely chop 1 potato and add to a bowl along with salt, pepper, and ½ teaspoon chili powder
  2. Cover bowl and shake vigorously until coated
  3. Bake at 400F for 15-20 minutes

  4. Finely chop ~½ white onion, 2 jalapenos, ½ cup ham and ½ cup Monterey Jack cheese until you have approximately ½ cup of each
  5. Saute the ~½ onion and jalapeno in 2-3 tablespoons oil for a few minutes

  6. Add the ½ cup ham along with generous dashes of salt and freshly ground pepper
  7. Add 6 eggs and cook until just slightly underdone

  8. Warm up the 8 tortillas briefly, this will help make them more flexible
  9. Each tortilla gets generous helpings of 1 potatoes, cheese, and the egg mixture
  10. Roll tight and place seam side down on a lined baking sheet
  11. Brush with oil or lard and bake for 12-15 minutes

  12. Turn the taquitos over halfway through if you want to
  13. When the edges are darkening and crisping up they are done
  14. Serve immediately with hot sauce of your choice
