  1. Loosen the flat 1 ½ lbs rice noodles with your hands and set them aside.
  2. Prepare the cornstarch slurry by mixing 1 tbsp cornstarch with 3 tbsp water. Stir until well combined and set aside.
  3. Heat a wok with 1 tbsp oil. Once the oil is hot, add the 1 ½ lbs rice noodles and give them a few quick stirs before adding 1 tbsp sweet soy sauce. Use a spatula to stir the noodles vigorously, ensuring the sauce is evenly distributed. Stir-fry for about 3-5 minutes, or until the noodles start to clump together and are slightly browned. Set them aside.

  4. Add the remaining 1 tbsp oil to the wok and heat it up. Sauté 4 cloves garlic until it is light brown and aromatic, then add the 2 oz chicken and 6-8 medium shrimp. Stir-fry the ingredients until they turn 2 dashes white on the surface, then add the ½ tbsp taucheo.
  5. Stir a few more times before adding 1 ½-2 cups chicken broth, 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp fish sauce, ½ tsp sugar, and kailan. Bring the sauce to a boil, then thicken it with the 1 tbsp cornstarch slurry. Once the sauce is thick and gooey, turn off the heat.
  6. On a serving plate, place a portion of the fried 1 ½ lbs rice noodles and pour the 1 tbsp sauce over the top. Add an even distribution of 2 oz chicken, 6-8 medium shrimp, and vegetables. Sprinkle 2 dashes ground white pepper over the Rad Na noodles before serving. Rad Na is excellent with a side of pickled green chilies or sliced Thai chilies.
